Say hello to my new favorite post-workout treat!
I stumbled upon this deliciousness while I was making Cucumber Honeydew Granita-- so this post is a double treat! Here's my recipe:
Ingredients:
almost 2 cups of chopped peeled + seeded cucumber
almost 3 cups of honeydew chunks
1/4 teaspoon salt
1/4 cup sugar
juice from 1 lemon
handful of mint leaves
cottage cheese
berries-- blueberries, raspberries, and blackberries are best!
Puree all ingredients in a food processor or blender. Pour mixture into a fine sieve and use the back of a spoon to gently speed the process along. Don't press too hard and push the solids through the sieve. Save your solids. Taste your strained liquid and possibly add a little extra sugar, salt, or lemon juice to your liking. Pour this mixture into an ice cube tray and freeze for several hours.
For the granita:
Take a few ice cubes and blend them with a food processor or blender. Serve with a sprig of fresh mint and some berries.
For Ashley's After-Workout Delight:
Add a spoonful or two of saved cucumber/honeydew solids to a bowl of cottage cheese. Toss in a handful of berries-- blueberries or blackberries are a great choice. I am in love with this salty/sweet/creamy combo. Oh yeah... After a really sweaty workout, I like to add a half scoop of protein powder to the cottage cheese.
